WEDNESDAY NIGHT AT THE MANOR ...SHAKSHUKA
Tonight I will be serving shakshuka .
Yesterday ( Tuesday ) I removed a tray of homemade tomato risotto from the freezer and at the end of the day , it was easily slow heated in the oven and it was just what I needed after a very emotional and exhausting couple of weeks.
I placed the thawed tomato risotto in an oven proof pan
Preheat your oven to 160 deg C.
Now place indentations into the risotto mixture and crack an egg into each indentation .
Place the pan into a preheated 160 deg C oven .
Cook for 10 minutes or until the egg whites are set and the tomato mix is heated through .
Remove from the heat and carefully spoon into serving bowls or alternatively cook in individual oven proof bowls .
This is delicious as a brunch or an easy filling main meal .
