CURRIED LEEK AND KUMARA SOUP(1)

At 11am this morning ,I started peeling and slicing 2 kg of kumara ( sweet potatoes ) , 3 medium leeks ( discard the green part ) and 1 medium onion . I had taken the homemade chicken stock from the freezer yesterday and today placed the defrosted stock ( 10 cups) in a large soup pot along with the sliced kumara , leeks and onion . It's nearly 1 pm and the stock is just starting to simmer ,I will continue to simmer the stock until the kumara , leeks and onion have softened . An hour on and the kumara, leeks and onion have softened . I added 2 tbs of bush curry( add curry to taste , 2 tbs is perfect for me, the flavour gets milder the longer it sits ),2 tbs of dried marjoram , salt to taste and 1 tbs of soft brown sugar and 2 tbs of minced garlic . Let the mixture cool a little and then process carefully with a stick processor . While waiting for the soup to cool place 300gm of bacon pieces in a pan into a preheated oven (200 deg C )until brown and crisp .Remove and drain on absorbent paper . Once the soup has been processed stir through the bacon pieces . Serve topped with a little extra bacon , a spoon of Greek yoghurt and a sprig of fresh coriander .
