CHEATS RASPBERRY AND LEMON CURD MERINGUE TRIFLE
Place 85gm packet of lemon flavoured jelly crystals in a heatproof bowl .
Add 1 cup of boiling water .
Stir to dissolve the jelly crystals , then stir through 3/4 cup of cold water .
Cool to room temperature .
Pour and divide the jelly between 6 dessert glasses ( this dessert is a visual experience and a taste sensation ).
Divide and scatter 250 gm of frozen raspberries over the jelly .
Chill for 3 hours until firmly set .
Now using your electric mixer beat 300ml of cream with 2 tbs of icing sugar untilsoft peaks form .
Now gently swirl 1/3 rd of a cup of store bought lemon curd through the cream .
Spoon over the raspberries .
top with with the remaining raspberries and 2 cups of store bought pouring custard .
Finish this dessert with a topping of mini meringues ...( store bought )
Chill until ready to serve .
