SATURDAY NIGHT AT THE MANOR ...CHICKEN AND BASIL TURKISH PIZZA

Preheat your oven to 180 deg C . Pour 700ml of bottled tomato pasta sauce into a medium pan . Simmer uncovered for about 5 minutes until thickened slightly . Meanwhile slice the pide widthways , slice each half horizontally , Shred 1/2 cup of fresh basil leaves . Place the pide pieces cut side up on an unoiled oven tray . Spread the pasta sauce over the pide slices , sprinkle with the shredded basil , 300gm of cooked and shredded chicken , 200gm of crumbled feta cheese and finally 40 gm ( 1/2 cup ) of grated parmesan and finally 1/2 cup of grated mozarella cheese . bake uncovered in the well preheated oven for about 15 minutes or until the cheeses melt and turn golden . Sprinkle with basil leaves .
