APRICOT AND PLUM SLAB CAKE WITH CINNAMON CREAM
Preheat your oven to 180 deg C .
Grease and line a 32cm x 22cm ( base measurement )oven proof pan with baking paper , extending over the long ends to use as handles .
You should have already prepared 1 quantity of basic butter cake mix , beating 1 tsp of mixed spice .
Spread the mixture in the in the prepared pan .
Drain 1 x 400gm of seeded dark plums in syrup and slice in half , leaving to sit on paper towels .
Repeat the process with 1x 800gm can of apricot halves .
Now pat the plum and apricot halves with paper towelling to dry .
Lightly press the plums and apricots , cut side up into the batter .
Place in the preheated oven for 50 minutes or until a skewer inserted comes out clean .
Remove from the oven and cool in the pan .
Using an electric mixture , beat together 300 ml of cream with 2 tbs of icing sugar and 1/2 tsp of ground cinnamon in a bowl until soft peaks form .
When the cake has cooled , dust the cake lightly with icing sugar .
To serve , slice cake into squares and serve with cinnamon cream .
