WHOLE ORANGE AND CHOCOLATE MUFFINS
Ingredients......1 whole orange, unpeeled and chopped, seeds removed, 1/4 cup of orange juice,
1/4 cup of rice bran oil / canola oil, 2 eggs, lightly beaten, 1 and 1/2 cups of plain flour, 1/2 cup of castor sugar, 1 and 1/2 tsp of baking powder, 1/2 tsp of bi carb soda, 1/2 tsp of salt,
100gm of dark chocolate, roughly chopped, 2/3 rds of a cup of dried cranberries, icing sugar to dust.
Preheat your oven to 200 deg C.
Liberaaly grease a 12 hole muffin pan.
Place the chopped orange in your food processor and pulse till finely chopped.
Add the juice, oil and eggs, pulse till well combined.
Place the sugar, flour, baking powder, baking soda and salt in a large bowl and stir to combine.
Make a well in the centre and fold in the orange mixture followed by the chopped chocolate and cranberries until just combined.
Divide the batter between the prepared muffin pan.
Bake for 20 minutes or until muffins spring back when gently touched.
Cool in the muffin pan for 2 minutes before removing to a wire rack to cool completely.
Keep stored in an airtight container for 3 days or frozen for up to 3 months.
Dust the muffins with icing sugar before serving.
