GINGER AND APPLE UPSIDE DOWN CAKE
Ingredients.....3 tbs of soft brown sugar, 2 apples, peeled, cored and thinly sliced, 4 cups of plain flour, 2 dsp of ground ginger, 225gm of butter/ marg, 2 cups of castor sugar, 4 tbs of golden syrup, 1 dsp of bi carb of soda, 1 and 1/2 cups of milk, 2 tbs of lemon juice.
Preheat your oven to 180 deg C.
Lightly grease a deep 20cm cake pan.
Sprinkle the greased pan with the soft brown sugar.
Arrang the apple slices over the base of the cake pan.
Mix the flour and ginger together and rub in the butter/ marg with your fingertips.
In a separate bowl mix together the bi carb of soda dissolved in the milk with the castor sugar and golden syrup.
Add this mixture to the flour, mix well and finally add the lemon juice.
Pour the blended mixture over the apple slices in the pan.
Bake in the preheated oven for 70 minutes, testing with a skewer inserted coming out clean.
Turn the cake onto a servinf dish with the apples as the topping.
