Ingredients.....1 cup of uncooked rice, 1 medium onion, finely chopped, 1/3rd of a cup of olive oil, 500ml of boiling water, 1 tspo of salt, 500gm of fresh baby spinach leaves.
Saute rice and onion in the olive oil, stirring occasionally for 15 minutes, over a medium heat.
Add the boiling water and salt, cover and continue to simmer for 10 minutes.
Meanwhile, slice the spinach into strips.
Add the sliced spinach to the rice , mix thoroughly.
This is a great accompainment to any meal.
