SPICED GINGER DROPS
Ingredients......125gm of plain flour, 1/4 tsp of ground ginger, 1/4 tsp ground mixed spice, 1/4 tsp of ground cinnamon, 1/2 tsp of bi carb of soda, 60gm of butter/ marg, cut in small pieces,
90gm of soft brown sugar, 2 and 1/2 tbs of golden syrup, warmed, 1 and 1/2 tbs of chopped glace ginger.
Preheat your oven to 180 deg C.
Line 2 baking trays with baking paper.
place the flour, ground ginger, mixed spice, cinnamon and bi carb of soda in a large mixing bowl.
Rub in the butter/ marg until the mixture resembles fine breadcrumbs.
Stir in the sugar, golden syrup and chopped glace ginger.
Knead the dough until soft.
Roll rounded teaspoons of mixture into balls and place an inch and half apart on the lined baking trays.
Bake for 15 minutes in the preheated oven or until golden.
Transfer the cooked biscuits to wire racks to cool.
These never last long in The Manor.
