KOTOPOULO KAPAMA ….( CHICKEN AND TOMATO CASSEROLE).
Ingredients.....juice of one lemon, 1/4 tsp of ground cloves, 1/2 tsp of ground cinnamon, cracked black pepper to taste, 8 chicken pieces, 1/2 cup of rice bran oil, 2 x 400gm cans of chopped tomatoes, 2 tbs of tomato paste, 2 tbs of minced garlic, 2and 1/2 cups of hot water.
Preheat your slow cooker to high.
Lightly grease the bowl.
Mix together the lemon juice, cloves, cinnamon and pepper and rub well into the skin of the chicken pieces.
place the oil in a large pan and fry the chicken pieces in it until golden.
Lift nout and place in the bowl of your preheated slow cooker.
Now add the tomatoes to the pan along with the tomato paste and minced garlic, gradually stir in the hot water and cook over a gentle heat until the tomatoes are mushy and the sauces thickens.
Add the sauce to the slow cooker and turn each chicken piece over until coated with the sauce.
Cover the slow cooker and continue to cook on high for 90 minutes.
Serve with steamed mixed grains or spanakoryzo.
