NEVER FAIL SPONGE CAKE
Ingredients......4 eggs lightly beaten, 3/4 cup of castor sugar, 1/2 cup of self raising flour,
1/2 cup of cornflour, 1/4 tsp of cream of tartar, 1/4 tsp of bi carbonate of soda, 1/2 tsp vanilla extract.
Preheat your oven to 200 deg C.
Grease a 23cm round cake pan and line with baking paper.
Beat together the lightly beaten eggs with the vanilla extract and castor sugar until thickened and pale.
In a separarte bowl mix together the dry ingredients and add to the egg mixture all at once .
Use a flat bladed knife to stir, this will aid in keeping the batter fuffy.
Pour the mixture into the prepared pan.
Bake for 25 minutes or until a skewer inserted in the centre comes out clean.
