CITRUS CHICKEN BREASTS
Ingredients......90gm of butter/ marg, 4 skinless chicken breasts, each sliced in half, 1/2 cup of white wine, grated zest of 1 orange, grated zest of 1 lemon, 3/4 cup of cream, 90gm of tasty grated cheese, cracked black pepper to taste.
Preheat your oven to 160 deg C.
Lightly spray a heatproof serving dish.
Heat the butter/ margarine in a large frypan , adding the breast halves and brown on both sides.
Remove the chicken breasts to the heatproof dish.
Add the wine to the frypan and stir for a few minutes.
Add the orange and lemon zests, season with the cracked black pepper.
Increase the heat to medium and slowly stir in the cream.
Stir to combine well.
Now pour over the chicken and sprinkle with grated cheese.
Place in the preheated oven for 30 minutes to complete the cooking and brown the cheese.
