VEGETABLE MEDLEY WITH MAPLE CREAM

Ingredients.......1 onion, peeled and thinly sliced, 1 carrot, washed and thinly sliced, 1 celery stick , thinly sliced, 1 small green capsican, seeded and thinly sliced, 1 small red capsicum, seeded and thinly sliced, 40gm of butter/ marg, 3 tbs of maple syrup, 2 tbs of chopped parsley, 125ml of cream, 2 tbs of Dijon mustard, sweet paprika, to taste. Melt the butter/ marg in a frypan and saute the vegetable slices for 3 minutes. Add the maple syrup and parsley, contiuing to cook for 2 minutes, to incorporate. Add the cream and mustard, season to taste with the sweet paprika. Simmer over a low heat until warmed through. Serve alonside or over your protein resting on a serving of mixed grain. Make this dish you own. I serve this medley over grilled fish fillets, (salmon or barramundi) over wild rice.
