MUSSELS WITH A TOMATO, WINE AND CHILI SAUCE

Ingredients.......500gm of tomato pasta sauce, 3 tbs of minced garlic, 1 and 1/2 cups of dry white wine, 1 and 1/2 tsp of chilli powder or 1 small red or green chili, sliced very thinly( leaving the seeds in to give it some kick.) 1 and 1/2 kg of fresh mussels, beards trimmed , rinsed ( broken ones discarded). 375gm packet of fettucine noodles, flat leafed parsley , to serve. Place the pasta sauce in a large saucepan along with the minced garlic, white wine and chili. Bring the sauce to a slow boil over a medium heat. Add the prepared mussels to the saucepan and cover with a lid. Cook until the shells have opened, discard any unopened shells. Cook the fettucine in salted boiling water until tender , drain and toss with a little oil. Serve the mussels over the fettucine, sprinkled with parsley leaves. A seriously easy, delicious and elegant meal.
