CINNAMON APPLE CAKE
Ingredients......125 gm butter/ marg, room temp, 1 tsp of vanilla extract, 165 gm of castor sugar,
1 tsp of ground cinnamon, 2 eggs lightly beaten, 125 ml of milk, 225 gm of self raising flour,
2 medium sized apples, cored, peeled and thinly sliced, cinnamon sugar for sprinkling.
Preheat your oven to 160 deg C.
Line a 22 cm cake pan with baking paper.
Use your mixer to beat the butter/ marg, castor sugar, cinnamon and vanilla extract until smooth and creamy.
Add the eggs and milk and beat until combined.
Pour half the mixture in to the prepared pan and add half the sliced apples on top.
Pour the remaining cake batter on top and finish off with remaining apple slices.
Sprinkle with cinnamon sugar and bake in the preheated oven for 45 minutes.
I always test cakes by inserting a skewer, assured that the cake is cooked when the skewer comes out clean.
Leave in the cake pan for 10 minutes before removing to a wire rack to cool completely.
