PICKLED EGGS
Ingredients.......12 hard boiled eggs, cooled and peeled, 2 cups of white wine vinegar, 1 medium brown onion peeled, sliced and separated into rings, 2 tbs of minced garlic, 1 tsp of soft brown sugar, 1 tsp of dried chilli flakes, 2 whole cloves, 20 black pepper corns , 1/2 tsp of fennel seeds, 1/2 tsp of mustard seeds, 1 bay leaf, 1 tsp of salt.
Pack the hard boiled eggs into a wide mouthed, sterilised glass jar and set aside.
Place all the vinegar and pickle ingredient mixture into a medium saucepan.
bring to the boil and then reduce the heat and simmer for 6 minutes.
Try to avoid inhaling the aroma as it will make your eyes water.
Pour the hot vinegar mixture over the eggs in the jar.
Cover with a lid and cool to room temperature.
Now place the jar with the pickled eggs in the refrigerator for 1 week which will complete the pickling process.
These will keep for 6 weeks.
