PASSIONFRUIT MOUSSE

Ingredients......1 tbs of gelatine, 1/4 cup of hot water, 375 ml of evaporated milk ( chilled ), 1/2 cup of castor sugar, 2 tbs of lemon juice, 1/2 cup of Greek yoghurt, 1/2 cup of passionfruit pulp, 1 tub of fresh ripe strawberries. Dissolve the gelatine in the hot water then set aside to cool. Now beat the carnation milk together with the sugar and lemon juice until light and fluffy. Beat in the gelatine, yoghurt and passionfruit pulp. Spoon the mousse into individual serving dishes and refrigerate until set. Hull and chop the strawberries and serve over top of the mousse to garnish and drizzle with any leftover passionfruit pulp. Simple and delicious.
