SULTANA SCONES
Ingredients......2 cups of self raising flour, 2 tbs of castor sugar, 1 tsp of baking powder, 1 tsp of mixed spice, 1 tsp of cornflour, pinch of salt, 1/4 cup of sultanas, 1 cup of thickened cream,1/2 cup of milk, a little extra milk for brushing.
Preheat your oven to 200deg C.
Lightly grease an oven tray and line with baking paper.
Mix together the flour, sugar, baking powder, mixed spice, cornflour and pinch of salt in a large bowl.
Stir in the sultanas and make a well in the centre.
Use a butter knife to make a well in the centre.
Use a butter knife to mix in the cream and milk to make a soft dough.
Turn the dough out onto a lightly floured bench.
Knead lightly and quickly until smooth.
Shape the dough into 2 cm thickness.
Cut the rounds with a 6cm round cutter and place slightly apart on the prepared tray.
Brush the tops with the extra milk.
Bake in the preheated oven for 15 minutes or until risen and golden brown.
