LEMON BUTTER BISCUITS
Ingredients.......250gm, butter/ marg, softened, grated rind of 1 lemon, 1 cup of icing sugar, 2 cups of plain flour.
Preheat your oven 180 deg C.
Line 2/3 baking trays with baking paper.
Beat the butter/ marg with the lemon rind until creamy.
Beat in icing sugar then stir in flour to make a soft dough.
Cover and chill for 30 minutes.
Lightly roll teaspoonfuls of the mixture into balls.
Place well apart on the lined trays and press down withb a fork that has been dipped in cold water to prevent sticking.
Bake in the preheated oven for 12 minutes or until slightly coloured.
Cool on the trays for about 3 minutes and then using a spatula transfer the biscuits to a wire rack until cold.
Storage ... in an airtight container.
