AIOLI
Aioli is a garlic flavoured mayonnaise and is the perfect accompaniment to grilled meat, chickenor fish.
It can be used as a dip for an entree or entertainer.
Ingredients......3 tbs of minced garlic/ 6 cloves of garlic, finely crushed, 4 egg yolks, 1/4 cup of lemon juice, 1 cup of extra virgin olive oil, 1/4 tsp of ground white pepper.
Whisk together the garlic, egg yolks, lemon juice and 1/2 tsp of salt in a bowl.
While whisking, gradually add the olive oilin a thin steady stream, making sure each addition has been absorbed before adding the next.
If the aioli becomes too thick, just add a little cold water.
Transfer to a serving bowl, stir in the white pepper.
