CREAMY SALMON AND FETTUCCINE
Ingredients.....250gm of fettuccine, 40gm of butter/ marg, 2 whole spring onions, thinly sliced,
300gm of fresh asparagus, cut into pieces, 420gm can of salmon, drained and flaked, 1 tbs of drained capers, finely chopped (optional), 1/2 tsp of cracked black pepper, 1 cup of cream.
Cook the fettuccine according to the packet directions.
Meanwhile melt the butter / marg in large pan with a lid over a medium heat.
Add the asparagus and spring onions, cover, and cook for 5 minutes.
Stir the salmon, capers, pepper and cream into the pan and cook uncovered, for 5 minutes, stirring occasionally.
Drain the fettuccine, and add to the salmon mixture in the pan.
Toss to coat.
