Ingredients.......250 ml of thickened cream, 200gm of mascarpone cheese, 4 thick slices of brioche loaf, 250 gm of fresh mixed berries.
Beat the cream in a medium bowl with your electric mixer until soft peaks form, fold in the mascarpone cheese.
Preheat your grill.
Toast the brioche slices on both sides and place a slice on each serving plate.
Spread with the cheese mixture and top with the berries.
Serve sprinkled with a little finely chopped fresh mint and dust with icing sugar (optional).
