MINT AND SPINACH CHUTNEY

Ingredients.....55gm of fresh spinach leaves, 3 tbs of fresh mint leaves, 2 tbs of fresh coriander leaves, 1 small red onion coarsley chopped, 1 tbs of minced garlic, 1 fresh green chilli unseeded and chopped, 1 dsp of castor sugar, the juice of 1/2 lemon. It is your choice but you can replace the spinach with double of the quantity of coriander and deseed the chilli, for a cooler version of the chutney ...( seriously why would you?). Place all the ingredients in your food processor and process until smooth, adding a dsp of water to enable the blades to move. Divide the chutney between shot glasses to serve and leave to chill in the refrigerator for at least 30 minutes before serving with your favourite curry or indian dish.
