BARRAMUNDI A LA ORANGE

Ingredients.......4 barramunbi fillets, 2 tbs of peanut oil, 80 gm jar of anchovie fillets (drained), 2 tbs of butter/ marg ( melted ), 1 dsp of grated orange rind, 2 tbs of orange juice, 4 thin slices of orange, cracked black pepper. Brush the barramundi fish fillets with oil on both sides. Place in a pan over a medium heat and cook for 5 minutes. Now turn the fillets over and place the anchovie fillets around the fish fillets. Pour the the butter/ marg over and sprinkle with the orange rind and juice. Season with the cracked pepper. Place the pan over a medium heat and heat for 5 minutes until cooked through. Serve topped with orange slices and a circle of anchovie and a sprinkle of chopped parsley. I prefer to accompany the barrumundi fillets with a mixed grain and stir fried vegies. Your meal, your choice.
