CREAMED RICE PUDDING
Ingredients.......3 tbs of short grain rice, 600ml of milk, 1 vanilla bean split lengthways,
2 tbs of castor sugar mixed with pinch of ground nutmeg , 150 ml of cream.(all measurements are correct from an old recipe book ....and yes this recipe works).
Place the rice in a strainer and rinse thoroughly under running water until the water runs clear.
Drain.
Place the milk in a medium saucepan, with the sliced vanilla bean and rice, and slowly bring to the boil over a medium heat.
Now reduce the heat a little and simmer, stirring often until the rice is soft and creamy, this could take about 20 minutes.
Stir in the sugar and pour the mixture into your favourite serving dish .
Whip the cream in a separate bowl until soft peaks form .
Remove the vanilla bean and cover with cling wrap and leave rest until cold.
When the pudding is cold , fold the cream through the rice.
Seriously decadent and delicious....
