POTATO PUFFS

Ingredients....3 medium potatoes, peeled, cooked and mashed, 3/4 cup of water, 50 gm of butter/ marg, 3/4 cup of plain flour, 2 eggs lightly beaten, 1 cup of grated tasty cheese, 2 spring onions, chopped (white part only), 1/2 tsp of ground nutmeg, canola oil. Place the water and butter/ marg in a pan and bring to the boil, reduce the heat and add the flour, stir over a low heat. Allow the mixture to cool slightly , beat in the beaten eggs and transfer the mixture to a medium bowl. Now combine the mashed potatoes and egg mixture, grated cheese, spring onions and nutmeg. Make balls of heaped tbs of the potato mixture. Heat enough oil in a deep fryer or pan to cook over a high heat until the potato mixture is puffed and golden. Drain on absorbent paper. Serve immediately, these are so light and fluffy .
