BREAD SALAD

5 thick slices of stale sourdough bread, cut into bite sized chunks, 4 ripe tomatoes, diced, 1 small red onion, peeled and finely sliced, handful of fresh basil leaves, handful of flat leaf parsley (shredded), cracked black pepper, 50ml of E.V olive oil,2 tbs of balsamic vinegar. Preheat your oven to 180 deg C. Place the bread chunks on an oven tray and bake in the preheated oven until dry and lightly coloured. Leave to cool. Combine the bread, tomato and onion in a bowl, tear the basil leaves over and the shredded parsley. season with the cracked pepper, to taste. Finally drizzle the oil and basalmic vinegar over and toss thoroughly.
