THAI CHICKEN PATTIES

These are delicious and very easy to make . You will need 500gm of skinless chicken fillets coarsley chopped and placed in your processor along with 1 lightly beaten egg white , 1 tbs of fish sauce , 1 tbs of minced ginger , 1 tbs of lemongrass paste , 1/2 cup of chopped coriander , 1 spring onion thinly sliced , 1/2 tsp of dried chilli . Blitz until finely chopped . Remove the mixture to a bowl and and shape into 1/4 cupfuls of the mixture into 8 patties . Spray a pan with cooking oil and heat over a medium heat . Cook patties in batches for 4 minutes each side until cooked through . Serve the Thai patties with a mixed grain and green vegetable salad . The cooked Thai chicken patties can be frozen .
