SALT
A pinch of salt can enhance sweetness in dishes .
You should add salt to the water when boiling vegetables , salt helps to keep the greens green and softens vegetables.
Always cook your onions slowly and add salt while they are cooking, the salt draws out moisture allowing the onions to become tender in a shorter time .
SALT ALTERNATIVES ...
You may not like salt , try lemon juice or a tsp of vegemite .
Try a little fish sauce in a passatta or use a little tomato sauce in Asian dishes .
If you have added too much salt , try diluting the dish with unsalted food like rice or unsalted potatoes or simply add an acid such as vinegar or lemon juice .
