SALT AND VINEGAR POTATOES

Just letting you know these are a treat . Preheat your oven to 200deg C. Place 1kg of all rounder washed and sliced in half red potatoes in a large saucepan , add 750 ml of white vinegar and 1 tbs of salt . boil , partially covered until potatoes are tender , then drain . Transfer the potatoes to a large baking paper covered oven tray . Using a fork , press down on the the potatoes until skins are split and slightly flattened . Divide 2 garlic cloves with skin intact and let them fall from your hands over the potatoes. Drizle with a little canola oil . Top the potatoes with stalks of rosemary if you have them growing in your garden . Bake in the preheated oven for 30 minutes or until the potatoes are golden brown .
