CHOCOLATE PEANUT SLICE (NO COOK )

Grease and line a 10cm x 20 cm slice pan . Place 1 and 1/2 cups of chopped and pitted soft dates in your processor along with 2 cups of almond meal , 3/4 cup of desiccated coconut , 3 tbs of Dutch cocoa , 1 dsp of vanilla extract and blend for 1 minute , finally add 2 tbs of honey . Continue to blend until the mixture starts to form a fine crumb . Now add 1 tbs of boiling water and blend for 30 seconds , the mixture will come together . Set aside 1 heaped tbs of the date mixture and press the remaining mixture into the prepared slice pan .(smooth the surface with the back of a spoon ). Place in the refrigerator until set / firm , about 45 minutes . Remove the slice from the pan using the baking paper as a lever . Spread 1/2 cup of crunchy peanut butter evenly over the slice . Crumble the reserved date mixture over the peanit butter . Cut into even slices to serve , store in an airtight container in the fridge .
