CHICKEN AND VEGETABLE KORMA
Today I made my favourite comfort food .
First I made a paste of 4 tbs of desiccated coconut , 10 chopped cashews , 1 dsp of ground coriander , 1 tsp of garam masala , 2 tbs of minced garlic and finally 125 ml of water .
Puree till you get a thick paste and then set aside .
Now in a large fry pan heat 2 tbs of coconut oil over medium heat add 1 medium peeled and sliced brown onion , fry until the onion softens , then add 2 dsp of bush curry powder ( the blend is your choice ), 1/2 tsp of tumeric powder , 1/2 tsp of chilli powder ( your choice).
Add 200ml of coconut milk , stir to combine .
The aromas are filling your kitcken .
It's time to add the paste and stir through over a low heat and cook for 5 minutes .
Now add 2 sliced and cubed potates , 100 gm of frozen peas , 2 large grated carrots , 100gm of frozen baby beans, 4 tomatoes sliced into 8ths and 375 ml of vegetable stock , 1/2 bunch of coriander , stalks and roots finely sliced and finally 800 gm of pulled chicken .
Bring this to the boil and simmer for 30 minutes , then add another 200ml of coconut milk , simmer till the mixture starts to thicken .
The longer it sits the more intense the flavour .
