RICH CHOCOLATE MOUSSE

Ingredients......90gm of dark chocolate, broken into pieces, 3 eggs separated (egg yolks lightly beaten, egg whites, whisked until stiff), 2 tbs of Apera (cream sherry), 4 tbs of whipped cream, chocolate curls to decorate. Melt the chocolate in a saucepan over a low heat. Remove the pot from the heat, allow to cool a little and add the sherry and mix the egg yolks in. Carefully fold in the stiff egg whites. Divide the mixture between 4 ramequins and leave in the refrigerator to set. Pipe the whipped cream on top of the mousse and top with chocolate curls. To make the chocolate curls, shave thin layers from a block of chocolate, using a potato peeler.
