A TIP FOR MARINATING MEAT OR FISH
Marinating meat or fish in oil, cider or wine before cooking tenderises it.
Add fresh whole herbs to the oil, cider or wine to give the marinade extra flavour.
Try to think ahead about the meals you are going to make through the week , because if you are using a marinade, it is best to cover the meat or fish with marinade and leave it in a cool place turning occasionally.
At best leave the marinating meat or fish marinating in the refrigerator overnight.
Remember, it is always flavours of food enjoyed that evoke lasting memories.
