POTATO CAKE
Ingredients .....8 medium 'all rounder' potatoes, 6 tbs of canola oil,] 1 tbs of minced garlic, 1/2 tsp of ground pepper, 2 cups of breadcrumbs, 1 and 1/2 cups of grated tasty cheese, 1/2 cup of finely grated Parmesan cheese.
Preheat your oven to 180 deg C.
Grease a deep 20cm springform pan with cooking spray and line base and sides with baking paper.
Peel the potatoes and slice them thinly .
In a small bowl mix together the oil, minced garlic and pepper.
Mix together the grated tasty cheese and Parmesan.
Now over lap slices of the potatoes to make a layer over the base of the pan.
Brush with the oil mixture , sprinkle with breadcrumbs and grated cheese mix.
Continue layering the potatoes, oil mixture, grated cheese mix, ending with a layer of the cheese mix.
Press the mixture down firmly with the back of a large mixing spoon.
Bake in the preheated oven for 1 hour or until golden on top.
Serve warm.
