ANZAC SQUARES
Ingredients .....1 cup of plain flour ,2/3 cup of raw castor sugar ,1 cup of rolled oats, 100gm of butter/ marg, 1 cup of desiccated coconut , 1/4 cup of golden syrup ,1/2 tsp of bi carb of soda ,1 tbs of hot water ...
Preheat your oven to 180 deg C .
Spray a shallow pan ( 18 x 28 cm ) with cooking oil and line with baking paper .
If you enjoy an Anzac biscuit, you will love this Anzac slice .
In a large bowl mix together the sugar and flour , oats and coconut .
Make a well in the centre of the mixture .
Now place the butter/ marg and golden syrup in a small saucepan , stir over a low heat until the butter/ marg has melted and the mixture is smooth , remove from the heat .
Dissolve the bi carb of soda in the hot water and add immediately to the butter mix and stir until foamy .
Now combine the wet and dry ingredients and stir with a wooden spoon until well incorporated.
Pour the batter into the prepared pan ,press the surface firmly with the back of the wooden spoon to smooth the surface .
Bake in the prehearted oven for 30 minutes or until golden brown .
Cool in the pan then use the baking paper to remove from the pan and cut into squares .
