TOMATO SAUCE

You will need 3.5 kg of tomatoes chopped, 1 kg of apples peeled and chopped, 6 onions peeled and chopped, 2 cups of brown castor sugar, 4 cups of malted vinegar, 2 tbs of salt, 1/2 tsp of cayenne pepper, 1 tsp of black pepercorns, 1 tsp of allspice, 1 dsp of whole cloves. Place the tomatoes, apples, onions, sugar, vinegar, salt and cayenne pepper into a soup pot. Tie the peppercorns, allspice and whole cloves in muslin and add to the tomato mixture. Boil steadily for 2 hours or until the mixture is completely pulpy / mushy. Discard the whole spices. Using a hand processor, process the tomato mixture and then return the to the heat and boil for 2 minutes. Now pour into warm, clean, dry bottles and seal.
