PRAWNS WITH ZUCCHINI
This was a favourite meal of my son Dale, back in Castle Garden when he was studying at university .
This recipe also represnts the clean , simple flavours of Bengal .
Put 500 gm of medium sized raw prawns in a bowl .
Sprinkle with 1 dsp of turmeric and 1 tsp of salt , toss to coat the prawns .
Heat 2 tbs of chilli oil in a large frypan over a medium heat .
Add 2 tbs of minced ginger and 2 green chillies ( whole ) , stir to combine .
Add the prawns with tails intact , stirring until the prawns are translucent .
Stir in 4 medium zuchinnis, washed and diced .
Reduce the heat to low , cover and cook till the zucchinis are tender .
Serve hot over a grain of your choice , my favourite is wild rice .
Back in the day Dale would only eat brown rice .
