CHICKEN SALTIMBOCCA

Chicken saltimbocca was inspired by the much loved Italian veal dish of the same name ...saltimbocca...which literally means ' jump into the mouth ', referring to it being very quick to cook and eat. Slice 2 skinless chicken breasts in half . Place a thin slices of parmesan cheese in the centre of each 1/2 breast and topped with a slice of prosciutto. Place a sage leaf in the centre and carefully secure with a wooden toothpick . Melt 60 gm of butter/ marg in a large frying pan and add the chicken breasts and brown quickly on both sides for a few minutes . Season with coarse black pepper . Remove the chicken to a warmed serving plate . Add 1/2 cup of white wine to the pan with a tbs of butter/ marg and scrape the pan and swirl together to make a rich sauce and then drizzle over the chicken saltimbocca and serve immediately .
