HOT SALMON SALAD

Preheat your oven to 160 deg C . Steam 1 kg of skinless salmon fillets , then flake the fillets . I then mixed together an Asian salad mix and 275gm of zucchini spaghetti in a bowl seasoned with a little chilli oil and cider vinegar . Then add the flaked salmon pieces stirring through to mix . Then I warmed a cup of milk and cream mixed together in a small saucepan and mixed through 2 tbs of grated parmesan cheese and 1 tbs of plain flour and stirred till smooth and thickened. Finally I chopped a handful of fresh spinach leaves and stirred them through the sauce , then stirred this through the salmom salad and topped this with some dried crispy onions . Place the mixture in an oven proof dish and bake for 30 minutes , no longer . Enjoy with your choice of grain .
