BAKED STUFFED SQUID .
It's just a matter of ordering 1 kg of small squid from your local seafood store .
Preheat your oven to 160 deg C .
Place in a small bowl....1 dsp of minced garlic ,2 tbs of chopped parsley , 1 cup of fine breadcrumbs ,3 tbs of vegetable oil , grated rind of 1 lemon , season with course black pepper and mix thoroughly .
Now stuff the squid bodies with the mixture and secure the opening with toothpicks .
Grease an ovenproof dish large enough to hold all the squid , spread a layer of passatta over the base of the dish , place the squid in the dish and mix remaining passatta with 500ml of dry white wine and then pour over the squid .
Bake in the preheated oven for 45 minutes .
To serve sprinkle with finely chopped parsley and lemon wedges .
