DAY ONE OF LOCKDOWN CHALLENGE ..(2) ..chicken soup

I sliced the chicken in half . Skinned and deboned one half of the chicken . Placed the chicken bones in the soup pot with 6 litres of water , I boiled and simmered these for 60 minutes . Then remove and discard the bones . Add the prepared chopped vegetables ....celery , carrots, onions , minced garlic , season with cracked black pepper ( coarse pepper ), bush curry powder and dried lemon myrtle ( the last 2 items are available from Source .. in Franklin st Traralgon .)or alternatively add 2 packets of dried chicken noodle soup . Now add the meat from the half chicken carcass... chopped drumstick, fillet and thigh . Bring the soup to the boil , reduce the heat to a simmer and continue to cook over a low heat for 45 minutes . Turn off the heat and let sit overnight , or for 4 hours to allow the flavours to develop .
