DAY TWO OF LOCKDOWN CHALLENGE (2)...Chicken Casserole

I warmed the soup over a medium heat until it was simmering and added 1 cup of brown rice , 1/2 cup of tri coloured quinoa and 1/2 cup of wild rice . I sweet potato , peeled and cubed , 3 tbs of honey and 1/4 cup of crumbed almonds . Simmer until thickened and sweet potatoes are tender . The flavours are just amazing . I will also be able to usethe chicken casserole preparation as a filling for pies .
