SO DOES SEARING MEAT SEAL IN THE JUICES ?

To sear food , especially meat is to brown meat in very little hot fat or oil before grilling , roasting , braising or stewing.
To sear is to colour.
Juices are liquids that are released from fruits , vegetables and all types of  meats .
Juices can be extracted by several methods , squeezing , pressing ,liquidising , freezing , thawing and heating .
Do not confuse cooking meat quickly over a high heat with placing the meat on a hot surface to brown the meat without cooking through .
Juices will naturally escape from the meat but not so much as when meat is pierced with cooking utensils.
Meat juices will run even when  coated with flour prior to cooking .
Therefore it is conclusive that searing meat does not seal in the juices .
