BEEF PICANTE

Place 500gm of beef mince into a bowl , add 1 tbs of chilli flakes , 1 tbs of ground cumin , 1 tbs of minced garlic , 1 onion finely chopped .
Stir to mix .
In separate bowl add 1 can of diced tomatoes , 1 dsp of cracked pepper , 100gm of feta cheese , 1/2 cup of  fruit chutney ....a  fruit jam works well as a substitute for the fruit chutney .
Now process these ingredients till you get a chunky salsa .
Combine the ingredients of the 2 bowls in a large pan and cook over a medium heat for 20 minutes .
Serve in  stand up taco shells with a green leafed salad .

PHILLY POTATO

4cups of instant mashed potato  mixed with 4 cups of boiling water .
Add 1 lightly beaten egg.
1/2 cup of finely chopped chives .
1 tub 250gm of creamed cheese
Beat till smooth and silky .
Place in a casserole and then into a preheated oven ( 160 C ) for 20 minutes or until there is a golden crispy crust ,.

STIR FRY GINGER CHICKEN WITH BEETROOT JAM AND PHILLY POTATO


This was so good .
2 onions peeled and sliced placed in a pan with 2 t bs of peanut oil and cooked over a medium heat .
I then added 1 tbs of minced garlic , 2 tbs of minced ginger .
3 stalks of finely sliced celery , 4 yellow squashes sliced , 1 red capsicum sliced and 4 spring onions sliced .
350 gm of sliced mushrooms ..
Cook over the heat for 4 minutes stirring all the time with a wooden spoon.
At this point I added 4 sliced chicken thighs and cooked for a further 10 minutes .
I prepared the philly potatoes ...
Grated a cooked beetroot and added a reduction of beetroot juice with pomegranate syrup...( a tasty combination )
I served the stir fry chicken over the philly potatoe and added the beetroot jam as a side .
It was so good Nicole requested seconds .

THANKS RUSSELL NORTHE

2 hours after speaking with Russell Northe`s office , I received a call from the  consumer liason officer at the Latrobe Regional Hospital .
I have a meeting Monday 16th November .

THE ELEPHANT IS STILL IN THE ROOM

The elephant is a flaw in the system at the the Latrobe Regional Hospital , Traralgon .
A system that lacked any duty of care to my terminally ill husband , a phone call from the hospital initiating a meeting with me has failed to materialise .
I now have a list of people who have approached myself  with similar experiences , but afraid to speak out to rectify the problem because they are worried about accessing the hospital in the future .
I`m not going away , the system is flawed I want it fixed , I have asked Russell Northe our local MP to intervene and have sent a letter to the Health Services Commissioner .
In this time , there will be sick patients still falling through the cracks .

HEARTBURN

Heartburn follows the consumption of food , wine and sometimes medication.
Heartburn also know as gastric reflux or indigestion and results in a burning sensation in the chest or throat , leaving a bitter or sour taste in the mouth .
Heartburn is a result of our lifestyle . We  miss breakfast , drink lots of caffeine , eat snacks on the run , relax with alcohol and  eat a large meal quickly in one sitting .
We also lay down  or recline to an arm chair too soon after eating .
Anything that puts a lot of pressure on the stomach can lead to heartburn .
Heartburn is a result of the valve between the stomach and oesophagus opens more than it should , allowing acid to flow from the stomach to the lower oesophagus .
Eating   slowly , regularly with small mouthfuls  and chewed well , can hep reduce the symptoms of heartburn , along with a mindful intake of alcohol ...
 

RAINBOW MEATLOAF

All you need is 500gm of mince ...you know what you like .
I used premium beef mince ...
Place  it in a bowl , now add a grated carrot , a grated zucchini , a grated med sized cooked beetroot ( avaialable in the vegie section of your supermarket ) 1 tbs of minced garlic , a dsp of ginger ,..2 stalks of spring onion  sliced ( green stem only )
Now take a breathe ....relax .
Peel slice an onion , a small red chilli ( with seeds ) and wilt   in a pan with a glug of rice bran oil.
Add it to the mix .
Using your processor ....process a cup of walnuts till roughly chopped .
Add the walnut mix to the bowl .
It`s now time to lightly beat an egg and add to the mix to aid with the binding .
Look at what you have it`s rich in colour and aroma .....and you haven't even started the cooking process .


Place in a lightly sprayed  log tray , cake pan , casserole  even a divide the mix between a 12 muffin cake tray.
Place your tray on the middle siding  in an oven preheated to 160 deg C for 1 hour until browned on top .

 I dressed the uncooked mix with a mixed medley of cherry tomatoes .

SPINACH ,PEA AND RICOTTA FRITTER

Thaw out 120gm of  frozen peas and roughly crush them with a meat tenderiser  or fork.
Place the peas and finely sliced fresh spinach leaves in a bowl along with 240gm of ricotta , 3 eggs lightly beaten , 50gm of chia seeds , 1 tbs of grated lemon rind , 2 tbs of finely sliced mint leaves .
Rock salt and cracked pepper to taste .
Make sure all ingredients are well mixed , cover and refrigerate for 30 minutes .
Spray a fry pan with cooking oil also adding 2 tbs of rice bran oil .
Heat pan over a medium heat .
Place golf ball sized rounds of the mixture into the pan , cook in batches until lightly browned on both sides .
Serve with a leafy green and carrot salad  drizzled with freshly squeezed lemon , and torn pita bread .

Turnbull was a saving grace  in replacing Abbott......but never forget he`s a Liberal .
Dropping the titles of Dames and Knights is sugaring the bowl but the  Australian people
  won`t buy  a trade off for the increased GST  that Turnbull  is about to penalise all Australian consumers with ....
It is time for Shorten to find his voice .
