BISHOP`S BREAD

This is a colourful , hearty fruit loaf made with glace fruit , whole nuts  and brandy.
I love it .
This fruit loaf will keep for 2 weeks in an airtight container in the fridge .


Heat your oven to 160 deg C
Prepare 2 loaf tins with spray and line bottom and sides with baking paper .
Beat 2 eggs and 125 gm of castor sugar   till sugar is dissolved .
In another bowl sift 1 tsp of baking powder with 125 gm of plain flour and a pinch of salt .
Now with kitchen scissors dipped in hot water , cut 375 gms of a dried fruit salad mix into smaller pieces about the same size as glace cherries .
125 gm of  glace cherries ( a mix of red and green cherries )
375 gms of raisins
Add the fruit to the dry mix  and stir well to coat with flour
Now add 500 gm of shelled whole nuts  to the fruit and flour mix.
Mix together and then stir in the egg mixture  and  stir to combine thoroughly.
Halve the mixture between the two prepared pans , pushing the mix well into the corners .
Bake in the oven for 75 minutes until till firm to the touch when lightly pressed with  fingers .
Remove from the oven and immediately drizzle with 75 ml of brandy .
Let the loaves cool in the tin .
Remove the cooled loaves ,wrap in foil and store in the refrigerator till ready to serve .
