MIXED BERRY MUFFINS

These muffins are easily prepared and are happy to be frozen until needed. I use frozen mixed berries(thawed), but the berries can be replaced with choc chips or mashed bananas. Ingredients ......2 cups of self raising flour, 3/4 cup of castor sugar, 1 tsp of ground cinnamon, 1/2 cup of canola oil, 3/4 cup of milk, 2 eggs lightly beaten, 1 tsp of vanilla extract, 1 cup of frozen mixed berries (thawed). Preheat your oven to 180 deg C. Grease your muffin pan ( I do use a medium size muffin pan ), liberally with cooking spray. Mix together the flour , sugar and cinnamon in a large bowl. In a separate bowl beat together oil, milk, eggs, and vanilla extract. Make a well in the centre of the dry ingredients, pour in the wet ingredients. Using a wooden spoon mix to combine. Now add the berries and stir lightly until only just mixwd. Do not over mix the mixture. Spoon into the well greased muffin pans and bake in the preheated oven for about 20 minutes or until well risen and golden. Remove to a wire rack to cool. Serve sprinkled with icing sugar.
