TUNA & ZUCCHINI PASTA
Cook 400gm of dried spaghetti in a large pan of boiling water until tender .
Drain pasta and set aside .
Place the pan that cooked the pasta back on the heat and drain the oil from a 425gm can of tuna chunks into the pan .
Add a peeled and sliced onion and cook until softened .
Increase the heat and 2 tbs of minced garlic along with 3 coarsley grated zucchini.
Continue to stir while cooking , adding the grated zest and and juice of 1 lemon , the tuna chunks , and 2 capsicums trimmed and thinly sliced ( I used a red and green capsicum ) .
Stir over a medium heat until heated through .
Now add the drained pasta and toss to combine , season with cracked pepper , garnish with baby green salad leaves ( optional ).
