CARROT CAKE WITH ORANGE FROSTING
Preheat your oven to 160 deg C.
Grease and line 23 cm / 9"round deep cake pan .
Mix together 1 and 1/2 cups of plain flour with 1 tbs of baking powder , 1 tsp of ground cinnamon and 1/2 tsp of ground ginger in a bowl add 3/4 cup of softened butter/ marg , 3/4 cup of soft brown sugar and 3 lightly beaten eggs .
Beat well until just smooth , then stir in 2 tbs of orange juice , 1 and 1/2 cups of shredded carrots and 1/2 cup of chopped pecans .
Spoon the mixture into the prepared pan and spread the top level with the back of a spoon .
Bake in the preheated oven for 1 hour 10 minutes or until well risen , firm and golden brown.
Let cool in the pan for 10 minutes , then turn our onto a wire rack to finish cooling .
For the frosting , put 1/4 cup of cream cheese into a bowl with 2 and 1/4 cups of icing sugar , the grated rind of 1 orange , 1 tbs of orange juice
Spread over the top of the cake and decorate with pecan halves .
