POTATOES IN A PICKLED SAUCE
LAHORI ACHARI ALOO
Boil 450 gm of small new potatoes in their skins .
While these are cooking , heat 2 tbs of canola oil until hot over a medium heat and add
1 tsp of ground coriander
1 tsp of ground cumin
1 tsp of chilli powder
1/2 tsp of mango powder
1/2 tsp of garam marsala
1/2 tsp of turmeric
Stir fry for 30 seconds then add 3 tbs of minced garlic and continue to stir fry for 3 minutes .
Add 3 spring onions finely chopped , 2 tbs of tomato puree , 2 tbs of natural yoghurt ,
1 tsp of chilli powder , 5 tbs of cooked peas and salt to taste .
Add the drained potatoes mix to ensure everything is combined .
Dress with fresh mint leaves .
This can be served hot or cold accompanied by a yoghurt dip and chapatti .
It is delicious !
